BENEFITS OF TOFU
What is Tofu?
Tofu, or bean curd, is made from dried soybeans that have been ground, filtered, and boiled. It comes in different styles—from the very soft Japanese silken to extrafirm (usually your best bet). Tofu is packaged in a range of ways, from unrefrigerated boxes to blocks floating in giant, open pails. Go for tofu packed in water, inside sealed plastic tubs, in the refrigerated section of the store.
Why Eat It?
In addition to being wonderfully inexpensive, tofu is high in protein, low in fat, and very low in saturated fat. Other healthy benefits of soy: Some studies show it can lower cholesterol and may even help prevent certain types of cancer, including breast and prostate. Soy is best eaten in moderation and as a whole food—such as tofu or tempeh—since concentrated soy supplements contain higher levels of phytoestrogens (estrogen-like chemicals that occur naturally in plants), which may actually increase some women’s risk of breast cancer. One daily four-ounce serving is an excellent addition to a healthy diet.
Another before and after—I submitted one to the Before and After Weight Loss Blog. The before was taken on March 15th, 2011 and the After on March 18th, 2012. I was 215 lbs. in the before and 30 lbs. less in the after at 185 lbs. I’m still going and hoping to get to 165-168 lbs.
Here’s another before and after… I was probably 205 in the first picture. I’m 167 in the second!
Here’s a 30 pound difference! In the first picture I was 197lbs. I am now 167.6!
I’m slowly starting to love my body! I think it will look great when I hit my goal weight of 135!
Here’s a better one! I was over 200lbs and decided it was enough!
